Irish Soda Bread

Makes one loaf

From the kitchen of Nanci O'Reilly



3 cups Flour
2/3 cups Sugar
1 teaspoon Salt
1 teaspoon Baking Soda
3 teaspoons Baking Powder
1 1/2 cups Buttermilk
2 cups Raisins
2 Eggs Beaten
3 tablespoons Butter (melted)


Place raisins in a bowl of water while you are mixing dry ingredients. Sift all dry ingredients together than add all liquids and mix.....squeeze the water out of the raisins and stir in mixture. Place in a 10 inch round pan or round cast iron skillet (spray with Pam before putting in the pan). Bake at 350 degrees for one hour.
