American Pancakes

Makes Pancakes

From the kitchen of Marika



150g Plain flour
1 tsp Bicarbonate of soda
1 tsp Caster sugar
1 Egg
150ml milk
about 25g Butter or
1-2 tbsp oil


1. Sift the flour with the bicarbonate soda into a mixing bowl. Stir in the sugar. 2. Make a hole in the centre of the flour and add the egg. Beat the egg with a wooden spoon or whisk, allowing the flour to gradually become mixed in. 3. Add about a third of the milk and continue beating, allowing more flour to become mixed in. 4. Continue mixing, gradually adding the rest of the milk. When all the flour is incorporated, beat the mixture for about 2 minutes. 5. Place a non-stick or cast iron frying pan over medium heat. Grease lightly with butter or oil. Using a large spoon or ladle, drop small puddles of batter into the pan. After a minute or so, bubbles will appear on the pancakes, then the bubbles will become holes. When these holes appear, the pancakes are ready to be turned over. Do this with a spatula. Cook for a further minute, then remove the pancakes from the pan. Repeat until all the batter has been used up.
