Mrs. Claus' Christmas & Holiday Desserts - Recipe for Mandarin Orange Jell-O Salad

Mandarin Orange Jell-O Salad

Makes 12 servings • From the kitchen of Deborah Gobel

Ingredients

1 cup boiling water
1 package apricot Jell-O
2 containers Cool Whip
16 ounces sour cream
medium can crushed pineapple
small can mandarin oranges

Directions

  1. Grease favorite mold lightly with mayonnaise to help with unmolding later.

  2. In large bowl, dissolve 1 package of apricot Jell-O with 1 cup of boiling water.

  3. To the Jell-O/water mixture add two softened regular size containers of Cool-Whip and one 16 oz container of sour cream.

  4. Add a medium size can of crushed pineapple (I add the juice here) and 1 small can of mandarin oranges (I drain most of the juice, except for about 1/4 cup).

  5. Mix well with large spoon until light orange in color. Pour into mold.

  6. I suggest putting remainder in a smaller mold or bowl to serve with leftovers.

  7. Refrigerate overnight.
