1 cup white sugar
1 cup brown sugar
1 cup shortening
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon vanilla
2 eggs, beaten
2 cups flour
1 cup pecans
1 cup chocolate chips
2 cups oatmeal
2 cups rice crispies
Preheat oven to 350 degrees.
Grease baking sheets.
Mix both sugars well, removing all lumps.
Add shortening, baking soda, baking powder, vanilla, and beaten eggs. Mix well.
Mix in flour (it is starting to get thick).
Mix in pecans and chocolate chips (getting thicker).
Mix in oatmeal (very thick).
Mix in rice krispies (use your hands, it's too thick for a spoon).
Roll up into teaspoon sized balls, place on baking sheet and smash with fork.
Bake for 8-10 minutes, until golden brown.
These are absolutely delicious! Like chocolate chip on steroids! The Rice Krispies make them extra crisp and give an impression of lightness. Superb taste. I did switch the white sugar for an all brown sugar content, which added a hint of butterscotch to the flavor, and changed the shortening for a half butter half coconut oil mix. I had no shortening on hand, so... But I HAVE made them exactly as written and they were stupendous. YOU MUST MAKE THESE, you will thank me - and Melody ; )
