Recipe Details

Ingredients

2 cups fresh or frozen blueberries
1/2 cup margarine
1 1/4 cups sugar
1 cup self-rising flour
1 cup milk
1 teaspoon vanilla

Directions

  1. Preheat over to 350 degrees.

  2. Put berries in medium size pot and slightly cover with water. Bring berries to a rolling boil.

  3. Reduce heat and boil gently for 10 minutes; add 1/4 cup sugar.

  4. Continue to boil for 5 more minutes. Set aside.

  5. Put margarine in a casserole dish and let it melt in the oven.

  6. Mix together the flour, remaining sugar, milk and vanilla.

  7. Pour batter into hot dish, over melted margarine.

  8. Spoon berries and juice over batter and lightly stir.

  9. Bake for about 20 minutes or until golden brown.

  10. Let cool. Serve warm or cold.

Need to add a tablespoon of lemon juice with the blueberries.
