3 eggs, separated
1/2 cup milk
1/4 cup lemon juice
1 teaspoon grated lemon peel
1/2 cup sugar
1/3 cup all-purpose flour
1/8 teaspoon salt


  1. Heat oven to 350 degrees F.

  2. Grease 1-quart casserole.

  3. In a small bowl, beat egg yolks (reserve whites in small bowl).

  4. Blend in milk, lemon juice and lemon peel. Add sugar, flour and salt; beat until smooth.

  5. Beat reserved egg whites until stiff.

  6. Fold in yolk mixture gently but thoroughly.

  7. Pour into prepared casserole.

  8. Place casserole in a 13x9 inch pan; pour hot water into pan, about one inch deep.

  9. Bake for about 30 minutes or until light golden brown.

  10. Serve warm or cool.

  11. Top with whipped cream if desired.
