Dairy‑free, Kid friendly, Quick & easy

Ingredients

30 large marshmallows
1/2 cup margarine
1 1/2 teaspoons green food color
3 cups cornflakes (not crushed)

Directions

  1. Melt marshmallows and margarine in top of double boiler.

  2. Stir in coloring. Remove from heat and add cornflakes.

  3. Mix gently and quickly until completely coated.

  4. Drop from teaspoon onto waxed paper on buttered cookie sheets.

  5. Sprinkle lightly with red sugar.

I make this cookie every year and it's always a favorite among the crowds. Though I personally put some corn flakes aside and use red coloring on it to give it a more traditional feeling.
