I hate baking,but these are really fun to make.

Ingredients

200g of self rising flour
50g of plain porridge oats
50g of margarine
3 big lemons
1 egg
100ml of milk
handful of extra flour for rolling
tsp of margarine for greasing the tray

Directions

  1. In a mixing bowl, add the flour and oats.

  2. Add in the margarine and chop up in small squares.

  3. Mix the margarine into the flour and oats until it looks like breadcrumbs.

  4. Grate 3 large lemons and add in to the mixing bowl.

  5. In a jug beat the egg and milk. Then slowly pour the egg/milk mixture into to the dry ingredients mixing using a palette knife.

  6. Once it is ready, flour the surface and rolling pin, and roll to 2cm thick.

  7. Cut out and place on the tray.

  8. Bake for 10-20 minutes or until golden brown.
