Mocha Mania Cookies

Delicious cookie recipe.
14 large cookies
16 oz. Ghirardelli semi-sweet chocolate chips, divided
3/4 cup firmly-packed brown sugar
1/4 cup butter, softened
2 large eggs
2 tablespoons espresso powder
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon sea salt
Preheat oven to 350°.
Combine flour, baking powder, and salt in a small bowl.
Microwave 8 oz. chocolate chips in large bowl in the microwave until almost melted. Remove from microwave and stir the chocolate until fully melted.
Stir the sugar, butter, eggs, espresso powder, and vanilla into the melted chocolate. Beat with an electric mixer on high speed for 30 seconds.
Stir in the flour mixture.
Fold in the remaining chocolate chips.
Cover bowl and chill in the refrigerator for 30 minutes.
Drop by scant 1/4 cupfuls onto parchment-lined cookie sheets. Bake for 12-13 minutes or until cookies are puffed and feel set to the touch. Set baking sheet on a wire rack to cool before removing cookies with a metal spatula.
