Ingredients
1 cup margarine
1 cup white sugar
1 cup brown sugar
1 egg
1/2 teaspoon salt
2 teaspoons vanilla
1 teaspoon baking soda
2 cups flour
1 1/2 cups potato flakes
additional sugar
Directions
Preheat oven to 350 degrees.
Mix in order listed.
Roll into small balls, then roll balls in sugar.
Flatten on ungreased cookies sheet.
Bake for 8-10 minutes or until light brown.
