Mrs. Claus' Christmas & Holiday Cookies - Recipe for Spice Cookies

Spice Cookies

Makes 20 dozen bite-sized cookies • From the kitchen of Sherry Skinner

Ingredients

1 1/2 cups butter
2 cups sugar
2 eggs
1/2 cup molasses
4 cups flour
4 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon salt
additional sugar

Directions

  1. When ready to bake, preheat oven to 375 degrees.

  2. Cream butter and sugar in a mixing bowl, add eggs and molasses, mixing well.

  3. In a separate bowl, combine the flour, soda, salt and spices; sift together.

  4. Add the flour mixture to the creamed mixture and mix well.

  5. Refrigerate for at least one hour or overnight.

  6. Shape into 1/2 inch balls, roll in additional sugar.

  7. Place 2 inches apart on ungreased cookie sheet.

  8. Bake for 6 minutes, or until edges begin to brown.
