Kim's Famous Cashew Brittle

This recipe is formulated with a 1000 watt microwave; adjust your time with the wattage of your microwave.

2 cups salted roasted cashews
1 cup sugar
1/2 cup Karo light corn syrup
1 tablespoon butter or margarine
1/2 teaspoon butter flavoring
1 teaspoon real vanilla
1 teaspoon baking soda
Lightly butter a cookie sheet, set aside.
Mix cashews/peanuts, sugar and corn syrup in a med. Pyrex bowl.
Microwave on high for 4 min. Stir and microwave 3 more min.
Remove and add butter, butter flavoring and vanilla.
Stir and return to microwave 2 minutes, add baking soda.
Stir and fold until mixture is fluffy.
Work quickly and spread out evenly on lightly buttered cookie sheet.
Let cool completely.
Break into pieces and keep in an airtight bag or container.
