Ingredients

1 cup raw peanuts
1 cup sugar
1/2 cup white corn syrup
1/8 teaspoon salt
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Directions

  1. Lightly grease a baking sheet, set aside.

  2. In a 1-1/2 qt casserole dish stir together peanuts, syrup, sugar, and salt.

  3. Cook 8 minutes on high in microwave oven stirring well after 4 minutes.

  4. Stir in butter and vanilla.  Microwave 2 minutes.

  5. Add baking soda and quickly stir till foamy.

  6. Immediately pour onto lightly greased baking sheet spread out very thin.

  7. When cool, break into very small pieces.

  8. Store in airtight container.

It was delicious... loved that it works in the microwave! Had to tweak the recipe some.. my microwave is 1200W so cooked it on 8 not full power 10. First batch burned on my high setting. Second batch was perfect! Thanks for the recipe... my family loved it!
