Mrs. Claus' Christmas & Holiday Fudge & Candy - Recipe for Pralines

Pralines

Makes 12 large pralines • From the kitchen of Dora Grimm

Ingredients

1 cup sugar
1 cup brown sugar
1/2 cup cream
1/4 teaspoon salt
1 cup pecan halves

Directions

  1. Mix first four ingredients in a sauce pan, and stir until sugar is dissolved.

  2. Cook over medium heat to soften ball state (240 degrees F.).

  3. Set pan in ice water 3 minutes.

  4. Beat until mixture becomes slightly cloudy. Add nuts.

  5. While mixture is still shiny, drop by spoonfuls onto greased surface or waxed paper.

  6. Let set.
