Mrs. Claus' Christmas & Holiday Desserts - Recipe for Pineapple Frappe

Pineapple Frappe

Makes approximately 12-14 large servings

Ingredients

1 package (16 ounce) marshmallows
1 can (15 1/2 ounce) crushed pineapple (reserve the juice)
2 half pints whipping cream
1 cup chopped pecans
graham cracker crumbs

Directions

  1. Grease large bowl with margarine and sprinkle with graham cracker crumbs.

  2. Melt marshmallows and 4 tablespoons of pineapple juice in the top of a double boiler.

  3. Let marshmallows cool. Add pecans and pineapple to help cool.

  4. Whip cream while marshmallows are cooling.

  5. BE SURE THAT MARSHMALLOWS ARE COOL and fold whipped cream into COOL marshmallows.

  6. Pour into prepared bowl and sprinkle graham cracker crumbs on top.
