Mrs. Claus' Christmas & Holiday Cookies - Recipe for Scotch Cakes

Scotch Cakes

From the kitchen of Miss Lucy Bourgeois

Ingredients

1 cup margarine, very soft
1 tablespoon cornstarch, level
4 1/2 tablespoons icing sugar, level
1 1/2 cups flour
pinch of salt

Directions

  1. Preheat oven to 315 degrees.

  2. Combine ingredients and mix well.

  3. Drop by spoonfuls onto ungreased baking sheets.

  4. Bake for 10-15 minutes, or until lightly browned.
