Date & Nut Bread

Makes 2 loaves

2 cups chopped dates
1 1/2 cup boiling water
1 Tablespoon butter or margarine
2 teaspoons baking soda
1 egg
2 cups brown sugar
3 cups flour
1 teaspoon salt
1 teaspoon vanilla
1 cup chopped walnuts


Pour water over dates, add butter and soda. Allow to cool. Add egg, brown sugar, flour, salt, and vanilla. Mix well. Stir in chopped walnuts. Spoon into loaf pans. Bake at 350 degrees for one hour. Cool and slice. May also be made into sandwiches with cream cheese filling.
