One Skillet Mexican Dinner
Makes 4 servings • From the kitchen of Jennifer Morquecho
Ingredients
1 medium sweet onion
2 cloves garlic
1 1/2 pounds ground beef
3 cans mixed vegetables, drained
1 small can tomatoes sauce
1/2 teaspoon ground cumin
1/4 teaspoon ground chili powder
1/4 teaspoon garlic powder
1 teaspoon salt
4 to 5 cups water (fill skillet until half-full)
1 package flour or corn tortillas
Directions
In a large skillet, brown meat with garlic and onions.
Drain meat and return to skillet.
Add in vegetables, tomato sauce, cumin, chili powder, garlic powder, salt and water.
Bring to a boil. Turn down heat and simmer for 20 minutes.
Serve with tortillas.
