1 medium size potato
1 large bag confectioner's sugar
Boil the potato until soft. Mash with a fork.
Stir in confectioner's sugar gradually until mixture forms a dough.
Roll dough out on sugared surface in a rectangular form.
Spread peanut butter thinly over entire rectangle. Roll the length.
Slice into pieces.
Store in candy tin lined with wax paper at room temperature.
