Mrs. Claus' Christmas & Holiday Pies - Recipe for Coconut Pie

Coconut Pie

Ingredients

1/2 cup (1 stick) butter or oleo (margarine), melted
1 can coconut
1 1/2 cups sugar
4 eggs
1/3 cup buttermilk
1 tablespoon flour
1 teaspoon vanilla
unbaked pie shell

Directions

  1. Preheat oven to 325 degrees.

  2. Pour melted butter or oleo into unbaked pie shell. Sprinkle 1 can of coconut throughout pie shell.

  3. Mix all remaining ingredients together and pour over coconut in pie shell.

  4. Bake for 45 minutes.
