Mr. Monroe's Famous Fudge

Ingredients

2 ounces of unsweetened chocolate, in squares or liquid
1/3 cup light corn syrup
1/2 cup milk
2 cups of sugar
2 Tablespoons of butter
1 teaspoon vanilla
chopped walnuts to taste

Directions

  1. Grease a plate or pie pan, set aside.

  2. Put the chocolate, corn syrup, milk, and sugar in deep saucepan and cook over low heat.

  3. Stir constantly until everything is dissolved completely.

  4. Turn the heat up slightly and boil slowly until the chocolate forms a soft ball in cold water. (This part can be tricky. Drop a little bit of chocolate into a cup of cold water with a spoon, wait a few seconds, then try to form the chocolate into a soft ball, slightly squishing ball that rolls gently between your fingers. If it falls apart, its too liquidly, so boil it a little longer. You may have to repeat this test frequently until chocolate is the right consistency).

  5. Remove the saucepan from heat. Stir in the butter and vanilla.

  6. Let mixture cool for 10-15 minutes.

  7. Then beat it with a large spoon, a strong arm and patience is needed.

  8. The fudge has been beaten long enough when you can feel it thickening and the surface loses some of its shine and begins to look dull.

  9. Stir in the nuts.

  10. Pour fudge into prepared pie pan or plate.

  11. Let mixture sit until it's cooled completely.

  12. Cut the fudge into pieces with a sharp moist knife.
