Rice Pudding

Ingredients
1/2 gallon (2 quarts) milk
1/3 cup rice
3/4 cup sugar
1 teaspoon salt
4 egg yolks
2 teaspoons vanilla
Directions
Beat egg yolks with some of the milk in a large sauce pot.
Whisk in remaining milk and rice.
Cook for 30 minutes over medium heat, stirring occasionally.
Add sugar, and continue to cook for an additional 60 minutes, stirring occasionally.
Add vanilla and remove from heat.
Put in serving or individual dishes and sprinkle with cinnamon.
Cool and refrigerate.
