Chocolate Chip Muffins
From the kitchen of Brian Wallen and his Mom
Ingredients
1 egg
1/2 cup milk
1/4 cup salad oil
1 1/2 cups flour*
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 to 1 cup chocolate chips
Directions
Preheat oven to 400 degrees.
Line muffin tin with paper muffin cups.
In a bowl, beat the eggs, then stir in the milk and oil. Mix in remaining ingredients.
Batter should be lumpy.
Pour batter into the muffin cups.
Bake 20-25 minutes.
Note: If you use self-rising flour, omit baking powder and salt.
